I want to build a simple BBD pedal using some MN3007 ICs I've bought on Ebay, any suggestions on one suitable for a noob? A link to a schematic would be even better.

There won't be anything as simple as a fuzz, I'm afraid, but there are some pretty satisfying and straightforward projects for which the MN3007 is likely THE most costly, critical, and hard-to-get component.  So if you have some, you've already done the hard part.

The Small Clone (Heladito) project over at Tonepad is a problem-free and decent-sounding pedal.  All the parts, with the exception of the 3007, are easily obtained.  The Zombie Chorus is techncally a little simpler, but quite honestly, by the time you do all the mods required to keep objectionable noise at bay, you're probably up to the same parts count, but you'll have parts hanging off the board.  The Heladito does everything you need and it is quite amenable to some nice mods.

The board layout is decent and not too crowded, but if you don't make your own boards, buy one from Francisco Pena, he's decent guy.

The CE-2 clone at Tonepad also sounds nice, but requires a MN3101 for clocking.  The Small Clone uses a much cheaper and easily-gotten 4046 CMOS chip.  Given that, the Small Clone represents a build you can sink your teeth into right away, without having to wait for special parts to arrive.
